Hot and humid is the forecast. So what we really need is something to take her mind off the unbearable humidity.How about a delicious
 Herbed Potato Salad
3 pounds small red potatoes, unpeeled, and cut into 1 1/2 inch chunks
3 tablespoons extra virgin olive oil
2 tablespoons cider vinegar
1 tablespoon fresh herbs( such is snipped tarragon, dill weed, or parsley)
2 tablespoons sour cream
2 tablespoons mayonnaise
2 teaspoons Dijon style mustard
1 green onion, chopped
1 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon celery seed
Cook potatoes until fork tender. Let cool slightly
meanwhile, in large bowl combine remaining ingredients. Add potatoes. Stir and refrigerate until serving time.
