Sweet Lemon Bars
1/2 cuo butter
1 cup unbleached flour, sifted
1cup granulated sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
Juice of 1 large lemon
1teaspoon fresh minced Lemon thyme or 1/2 teaspoon dried
Preheat oven to 350.Cream the butter and sugar. Add the sifted flour ,blending smoothly.Using your fingers,press the mixture into a 8x8 pan.Bake for 20 minutes.
Beat together the sugar,eggs,baking powder,salt,lemon juice and lemon thyme.Pour over the crust and bake another20minutes.Cool,cut into squares.Makes 16.
