Summer is here and the herb gardens are busy producing the wonderful herbs we all love.
Time to try a new recipe?
Zucchini with Basil
3/4 pound small zucchini
2tbl.flour
salt to taste
3tbl.chopped fresh basil
3tbl.freshly grated Parmesan cheese
freshly ground black pepper
2tbl.olive oil
1 clove garlic,finely minced
Preheat oven to 400 degrees
Do not peel the zucchini,but trim off and discard the ends.Cut zucchini into quarter-inch-think slices.Toss the slices in the flour seasoned with salt and pepper to taste
Heat olive oil in skillet and add the zucchini,tossing often,take care not to break the slices.When golden brown,slide zucchini onto a eight -inch pie plate.Sprinkle with garlic,basil,and cheese.Place in the oven and bake 5 minutes.
