I haven't done much with my herbs over the winter. I did however find this great recipe.
                                                        Zucchini with Basil
3/4 pound small zucchini
2 tablespoons flour
Salt to taste
freshly ground pepper
2 tablespoons olive oil
1 clove garlic
3tablespoons chopped fresh basil
3 tablespoons freshly grated Parmesan cheese

Preheat oven to 400
Do not peel zucchini,but trim off and discard the ends. Cut the zucchini into 1/4" slices.Toss the slices in flour seasoned with salt and pepper.
Heat the olive oil in a skillet and add the zucchini,tossing often,taking care not to break the slices.When golden brown,slide zucchini onto a 8" pie plate.Sprinkle with garlic ,basil and cheese.Place in oven and bake for 5 minutes.
